4 in 1 Express Kebab opened on Victoria Road in 2016, when three cousins who'd each worked in a different type of takeaway — one in a kebab shop, one in a pizzeria, one flipping burgers on a stall at the Saturday market — decided there was no reason a single small unit couldn't do all three properly, plus fried chicken for good measure.
The name's a bit of a joke that stuck: four different menus squeezed into one shop, run by one till and one very busy kitchen on a Friday night. It's meant we can never quite agree on what to have ourselves, but customers seem to like not having to choose between takeaways when the group can't agree either.
Doner meat is marinated on site the night before, dough for the pizzas is made fresh each morning, and burgers are hand-formed rather than bought pre-shaped. It's more work than running one simple menu, but it means everything on offer gets the same attention rather than three of the four being an afterthought.
We're open seven days a week, later on Fridays and Saturdays to catch the last bus crowd, and we still do most of the till work ourselves rather than handing the shop over to staff who don't know the regulars by their usual order.
